I love to cook with pumpkin and my favorite is pumpkin soup! luckily also the rest of the family loves pumpkin soup and so they don't mind me experimenting with different recipes and have pumpkin soup almost every week ;-)
last weeks recipe was very simple (as I had to be quick) but delicious:
pumpkin
sweet potato
fresh ginger
tumeric
nutmeg
cumin

Baked Pumpkin slices: Cut a pumpkin into 3-4 cm slices. (Don't peel the pumpkin). Put the slices (on some paper) onto a griddle. Flavour the slices with curry, salt, pepper, some garlic (add whatever you like) and pour some drops of olive oil over them. Heat the oven up to about 200° C and bake the slices for about 20 minutes (depends on what of pumpkin you've got). Serve with a dip from joghurt and coriander, garlic and enjoy the meal ;-)
