here and now...

right here and now...

... I listen to the giggles and joys of 3 girls playing together.
... I miss my little girl who went on an adventure all alone, but oh, so proud of her.
... I am tired because of a late night, but so happy, as thanks to a friend, I finally made it to the Cairo Opera House.
... I am "cooking in my head" (planning dinner).
... I love how much my big girl enjoys her horse riding and how brave she went straight back on after falling off this morning.
... I found something new to listen to - Tom Odell
... I decide to allow myself a little rest...

what to cook?

oh, a cooking post!

actually I have kind of a "cooking-low" at the moment, as I most days don't have a clue what to cook, how to keep it interesting and healthy...I guess you know exactly what I am talking about :-)

let me start with last nights dinner that actually turned out great! well, a bit spicy for the girls but just right for us grown ups.

weeknight curry - a recipe out of this book
it's vegetables (basically a mixture of what I've home) in a red Thai-curry paste, coconut-milk sauce. yesterday I mixed soba noodles in and yes, it was good, but spicy. luckily I kept some plain soba-noodles for the girls ;-)

earlier this week I found time to bake some bread again! again, out of this book, but in a slight variation, I made rye corn soda bread.
this is so easy and quick - go, do it!

2 1/3 cups rye corn flour
1 3/4 cups all-purpose spelt flour
1 3/4 teaspoons baking soda
salt
2 cups buttermilk
mix flours, baking soda and salt into a large bowl. make a well in the flour and pour in the buttermilk. stir just until everything comes together in a dough. turn out onto lightly floured countertop and knead for 30sec or so, to come together into slightly flattened ball, without many cracks.
put onto baking sheet, brush all over the top and sides with buttermilk and sprinkle with flour. slice deep slashes across the top of the dough to get it nice and crusty.
bake for about 30min...it will feel solid and sound hollow when you knock on it's base when ready - cool on wire rack and enjoy with some...

dill butter! well, after reading that at the end of the previous recipe I just had to make it, especially after I just got some fresh dill and oh, I started something...

chopped dill
chopped chives
chopped shallots
unsalted butter room temperature
salt
farmer cheese or soft, mild goat cheese
mix all chopped herbs into butter until all evenly through. crumble the cheese on top of the butter and stir a few times, just long enough to work the cheese into the butter, but keep the cheese a bit chunky!


so I am just realising, this week is actually going well...tonight it's one of my favourite pasta dishes - pasta incrostata. you can find the recipe in this book.

week-end

short, but good.



wonderful dinner at friends, Thursday night. delicious food, good company, sometimes it just all fits.
lazy Friday, lazy Saturday - enjoying the sun out on the terrace and watching the big girl riding. sometimes that's all it needs.

an international week-end. family fun rounding off the girls international week at school.
late nights and a wonderful sleep in for me on Saturday morning.
a bit of a downfall when we came home from dinner last night, to a fire in our building. luckily nobody got hurt and I am oh so grateful we weren't home when it started.
back to teaching classes since this morning, a busy week ahead.
